This is one of my childhood favourite meals, my mother's zucchini and cheese casserole.
It's simple, delicate and delicious, give it a try,, here is the recipe for six portions.
Ingredients:
8 medium zucchinis sliced
1 large onion in small slices
5 eggs
1 Cup of stale bread broke into pieces and soaked in cold water until softened
2 T. spoons of olive oil
1 1/2 Cup of grated cheddar cheese
1/4 t. spoon of cumin powder
Salt and pepper to your taste
First, start by soaking the bread in cold water for ten minutes then squeeze out the liquid and smash finely, set aside.
Boil some water with salt and add the sliced zucchinis boil for ten minutes, remove from the water and set aside.
In a pan pour the olive oil and add the sliced onion, add the cumin, salt and pepper, cook until they turn translucent.
Then add the cooked zucchini and the bread to the onion pan and mix well, let cook five minutes and add the eggs mix well. Finally add the grated cheddar cheese and mix until all is combined, cook another 3-5 minutes.
Now that all is ready pour the mixture to an oven pan and add some more grated cheese on top. Bake for 30 minutes at 350 F ( 176 C) or until the top is golden.
You can serve with a salad and some boiled potatoes or french fries.
