My Family Tuna Salad


This tuna salad (spread) recipe has been in the family for a long time and we have adapted the recipe several times through the years. I have added gherkin to my version and it's so good you would like to eat it again and again. You can prepare nice little canapés, sandwiches or add it to a green spring salad.

Ingredients: 
2 tuna cans in olive oil or water
1  fine sliced gherkin
2-3 T. spoons finely sliced onion
1 T. spoon fresh coriander
1 T. spoon fresh parsley
Zest of of one lemon  + 1 t. spoon lemon juice
4  sliced kalamata olives 
6 T. spoons mayonnaise 
Pepper 

Remove the water or oil from the tuna and add into a bowl. Add the rest of the ingredients into the bowl and mix well.

This tuna salad is perfect to make tea sandwiches, tapas or on a green salad.

My Mediterranean style scrambled eggs - recipe for two

This is my version of the Mediterranean scrambled eggs, perfect for a weekend brunch any time of the year. Herbs and Feta cheese are the stars of this recipe so make sure you choose your favorite herbs and the creamy and flavorful Macedonian feta.



Ingredients:
Four eggs
2-3 Tsp of finely chopped (1/4 of a small onion)
*Optional:  you can also add 1/4 of a tomato cut into small cubes of zucchini
2 Tsp of water or milk
1 Tsp olive oil
Choose two or three herbs of your choice:oregano, mint, parsley, cilantro, thyme, chives, dill etc
1/4 cup of Macedonian feta cheese
salt and pepper

Garnish with:
Capers
Kalamata olives
1 sliced tomato
Macedonian Feta cheese
Extra Virgin Olive Oil
Serve with good quality multi grain bread such as Montignac Integral bread

Directions:
In a bowl crack the four eggs and beat adding the two Tsp of water or milk.
Start by cooking the onion in the olive oil for two minutes.
Then add the herbs and stir for a second and let sit for two minutes.
Add the beaten eggs and keep stirring,  it has to cook evenly and must stay moist (4-5 min) medium heat.
Finally add the feta cheese and stir for another minute.

Garnish in a plate with whole grain toasts drizzled with olive oil and the sliced tomato. On top of the scrambled eggs add some more herbs, a bit of feta cheese, the capers and the Kalamata olives. Finally drizzle with EVOO.

*Serve with good quality multi grain bread such as Montignac Integral bread
