Repas Chilien 3 ingrédients & salade Très Cherry! - Chilean 3 Ingredient meal & Very Cherry Salad



Ici je veux partager avec vous ce repas pour les journées occupées où l'on manque de temps. C'est une sorte de repas "minute" Chilien, consommé par toutes les familles chiliennes car c'est rapide, facile, nourrissant et savoureux. Comme vous le savez déjà, l'avocat est un fruit qui contient une sans fin de vertus ce qui lui confère le droit d'être un "super aliment", de plus, c'est un repas vegan si vous enlevez le beurre et le fromage.  Alors voici la recette des "Fideos con palta"en moins de quinze minutes.

Ingrédients pour 2 personnes, vous n'avez qu'à doubler la recette pour nourrir votre famille:

5 petits nids de nouilles Capelli di Angelo ou une poignée de vermicelles de riz 
1 avocat Hass
2 C. à soupe de Parmigiano Reggiano 
1 c. à soupe de persil ciselé 
2 c. à thé d'huile d'olive
1 c. à thé de beurre
Sel et poivre au goût
Version vegan: ajoutez 1 c. à thé d'huile d"olive aux pâtes et pour remplacer le fromage 6-8 noix hachées.

Faites cuire les nouilles dans l'eau bouillante et salée pendant 4 minutes, pendant ce temps découpez l'avocat et à l'aide d'une fourchette écrasez-là vous obtiendrez une purée un peu rustique, ajoutez du sel et du poivre et les deux c. à thé d'huile d'olive. Essorez les nouilles et placez dans un bol ajoutez le beurre et mélangez, ensuite, ajoutez le parmesan râpé, la purée d'avocat et le persil. Servez et dégustez ce délicieux repas express!

This is a very common meal in all the Chilean homes specially on those days we are too busy to cook but we have a family to feed.  Although its a fast and easy meal prepared in less than fifteen minutes it's healthy and delicious, and its vegan if you do not add the butter nor the cheese! Here is the recipe of the "Fideos con palta".

Ingrédients for two but just have to double to feed the entire family:

5 Capelli di Angelo nests or some rice noodles (vermicelli)
1 Hass avocado
2 T. of Parmigiano Reggiano 
1 t. chopped parsley 
2 t. olive oil 
1 t. butter
Salt & Pepper
Vegan version: Add 1 t. of olive oil to the pasta and to replace the cheese add 6-8 chopped nuts.

Start by cooking the noodles in boiled (salted) water, it takes 4 minutes. Meanwhile mash the avocado with a fork leaving some chunks add the olive oil, sal and pepper. Now you can drain the noodles and put in a bowl, add the butter mix well. Then add the grated parmesan cheese, the mashed avocado and the parsley. Serve and enjoy this delicious express meal!

Comme accompagnement une salade de tomates cerises avec des cerises, j'ai eu cette idée aujourd'hui  en les regardant sur mon comptoir, et je me suis dis, pourquoi ne pas en ajouter?  Puis cet ajout a définitivement apporté une autre tournure à cette salade, et le résultat est tout à fait étonnant! 

12-14 tomates cerises coupés en deux ou en quatre
6-8 cerises fraîches sans noyaux
1 c. à thé de jus de citron
2 c. à thé d'huile d'olive
1c. à thé de mélasse de grenade
1 C. à soupe de coriandre fraiche 
1 C. à soupe de persil frais
Sel et poivre

Mélangez, ajoutez une cerise sur le tout et vous obtiendrez une superbe et rafraichissante salade aigre-douce et vitaminée!

The perfect side dish: Very Cherry Salad: while preparing the salad I saw the cherries on my counter and I thought why not give a twist to this common salad and add some cherries and some pomegranate molasses and it worked! Its really good! 
12-14 Cherry tomatoes 
6-8  fresh cherries without the pits 
1 t. spoon of lemon juice
2 t. spoons of olive oil 
1 t. spoon of pomegranate molasses
1 T. fresh cilantro
1T. fresh parsley
Salt & pepper


Toss all the ingredients together in a bowl to get all coated with the salad dressing, finally add a cherry on top, the result a fresh and delicious salad!

Afternoon Tea My Way







Spring is at our footsteps so why not prepare a colorful and eclectic afternoon tea?
As you know there's hundreds of tea sandwich recipes out there, the important thing is to prepare the ones you enjoy eating when having tea. Therefore, here two sandwiches prepared my way. We all have a style to prepare food and also to set the table, my way is a bit casual, a bit formal and universal. For this occasion I decided to use Moroccan glasses instead of cups and I think it works when combined to a green tea pot and green sandwich stand. My tea selection was The London Cuppa Loose Tea (Kenya & Assam).

The first recipe is the all time famous Chilean tomato sandwich, fresh and delicate perfect to accompany tea.
The second sandwich is the world renown salmon pumpernickel sandwich, colorful and delicious to eat while drinking tea.







Tomato tea sandwich for three: 

1 big tomato cut in slices 
2  large brown bread slices

Mayonnaise Spread:
1 T. Mayonnaise
1 t. Plain yogurt
1/4 t. mustard (Maille)
1/2 t. Dried dill  or 1 t. Fresh dill 
2 mint leaves + 3 more to decorate 
Fennel twigs to decorate 
Salt & pepper 

Start by mixing the mayonnaise spread
Spread the mayo over the bread and then add the tomato and decorate with the mint and fennel.
Cut the sandwich in three slices each, dispose on a Tea Platter 

Salmon Pumpernickel sandwich for three:

4-5 salmon slices 
2 large Pumpernickel slices of bread 
1/2 t. Butter 
1 T. 1/2 cream cheese 
1 t. capers 
1/2 lemon in thin slices then cut in half moons 
2 T. Spanish onion in thin slices (it's milder)
2 T. fennel cut in thin slices: this is my addition to this sandwich
1/2 t. dried ciboulette to decorate
Several fennel or dill twigs to decorate

Butter the two slices of Pumpernickel
Then spread the cream cheese evenly 
Add the salmon, on the top add the onion slices, the capers and the fennel slices. Finally add the lemon and the fennel twigs and ciboulette .
Cut each sandwich in three and put in a Tea Platter 

Italian Focaccia with spinach filling bought at an Italian bakery.

it enters at lunchtime,

butter dishes,
blue saltcellars.
It sheds
its own light,
benign majesty.
Unfortunately, we must
murder it:
the knife
sinks
into living flesh,
red
viscera
a cool
sun,
profound,
inexhaustible,
populates the salads
of Chile,
happily, it is wed
to the clear onion,
and to celebrate the union
we
pour
oil,
essential
child of the olive,
onto its halved hemispheres,
pepper
adds
its fragrance,
salt, its magnetism;
it is the wedding
of the day,
parsley
hoists
its flag,
potatoes
bubble vigorously,
the aroma
of the roast
knocks
at the door,
it's time!
come on!
and, on
the table, at the midpoint
of summer,
the tomato,
star of earth, recurrent
and fertile
star,
displays
its convolutions,
its canals,
its remarkable amplitude
and abundance,
no pit,
no husk,
no leaves or thorns,
the tomato offers
its gift
of fiery color
and cool completeness.
